Marinades And Rubs

So I made this yesterday when I decided to roast a pork tenderloin. It’s an interesting combination of flavors, but it was way tasty.  Probably a bit too strong to use on chops though.

Pork Marinade

1/2 cup soy sauce
1 clove garlic, crushed
2 shallots, finely chopped
2 Tbs red wine
1 Tbs honey
2 tsp brown sugar
1 tsp grated ginger
1/4 tsp ground cinnamon
1 tsp olive oil
1 1 1/2-2 pound pork tenderloin, trimmed of silverskin

Combine all ingredients but the pork in a medium bowl. Place pork in a heavy freezer bag and add the marinade. Toss in the fridge and let sit for up to 6 hours.
