2 c. flour
1/3 c. sugar
3 tbsp. baking powder
1 beaten egg
1 c. blueberries
1 c. milk
3 tbsp. Crisco oil

Mix all ingredients. Pour on hot non-stick skillet or griddle. Makes eight 6 inch pancakes. Serve with warm maple syup and lots of butter.

This recipe is easily doubled.
